Preheat grill to medium. Sprinkle pork with salt and pepper. Grill over med heat for 20 min, or until juices no longer run pink. Remove from grill and let rest 5 minutes before slicing.
Oven-Roasted Tomatoes
Preheat oven to 450. Toss tomatoes in olive oil until well coated. Arrange in a single layer on a baking sheet. Sprinkle with salt, pepper, and oregano. Bake at 450 for 15 minutes
Quinoa
Add quinoa and broth to a saucepan and bring to a boil. Reduce heat cover and simmer until all liquid is absorbed (about 15 min). Fluff with a fork and serve.
