Mix all ingredients except oil in a medium bowl. Form into 6 patties. Lightly sauté patties in coconut oil, about 5 minutes per side.
Steamed Asparagus
Break tough ends off of asparagus. Discard. Cut remaining asparagus into 2 inch pieces. Place in steamer basket over 2 inches of water. Steam 7-8 minutes or until bright green and tender-crisp.
Whole Wheat Cornbread
Preheat oven to 400. Mix dry ingredients in a bowl. Add wet ingredients, and mix just until combined. Pour batter into greased 8 or 9 inch cake pan or large cast iron skillet. Bake at 400 for 20 minutes or until toothpick inserted in center comes out clean. 8 servings.
Notes
*You can easily make your own whole grain breadcrumbs by putting slices of bread in the blender or food processor. 1 slice = about 1/2 c. crumbs
