Ingredients

Italian Chicken Pasta Salad

  • 1 lb 100% whole wheat pasta rotini
  • 2 boneless, skinless chicken breast
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 can artichoke hearts drained
  • 6 oz feta cheese crumbled
  • 5 leaves fresh basil sliced into thin ribbons

Creamy Garlic Salad Dressing

  • 1/4 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 1 Tbsp bottled minced garlic
  • 3 Tbsp lemon juice
  • 2 Tbsp fresh basil
  • 1 tsp himalayan salt
  • 1 Tbsp honey

Instructions

Italian Chicken Pasta Salad

  • Cook the pasta per package ingredients and drain. Cook the chicken anyway you like (boil, bake, grill, etc). Combine all ingredients (including dressing below) except cheese and basil in a large bowl. Divide salad among 4 bowls. Top with cheese and basil ribbons.

Creamy Garlic Salad Dressing

  • Combine all ingredients in a blender. Blend until smooth.
