Soak bread in milk. Shred zucchini and squeeze out excess moisture by squeezing it in paper towels. Combine chicken, zucchini, eggs, salt, pepper, and garlic. Add bread. Mix well and form into 12 meatballs. Place meatballs in a slow cooker. Add bell peppers, onion, and pineapple to the slow cooker. In a small bowl, combine liquid aminos, honey, garlic, ginger and red pepper flakes. Pour over chicken and vegetables. Cook on low 8 hours or on high 6 hours. 40 minutes before serving. Cook rice according to package directions or see notes section. Serve meatballs, sauce, and vegetables over rice.
