Preheat waffle iron. Spread one side of each piece of bread with butter. Place 1 oz. cheese on un-buttered side, and top with another piece of bread (butter sides out). Cook in waffle maker 4-5 minutes or until bread is toasted and cheese is melted. Repeat with remaining bread and cheese.
Roasted Vegetables
Preheat oven to 400. Cut broccoli into florets. (They look like miniature trees!) Cut green beans into 2 inch pieces. Toss vegetables with oil. Spread on a baking sheet. Sprinkle with kosher salt. Bake at 400 for 20 minutes or until beginning to brown.
