Grilled Marinated Vegetables

Ingredients

Grilled Marinated Vegetables

  • 1 red onion cut into large chunks
  • 2 zucchini cut into bite sized chunks
  • 2 yellow squash cut into bite sized chunks
  • 1 pint baby bella mushrooms whole
  • 1 red bell pepper cut into large chunks
  • 1 orange bell pepper cut into large chunks

Marinade

  • 1/4 cup extra virgin olive oil
  • 1/4 cup Balsamic Vinegar
  • 1 Tbsp bottled minced garlic
  • 2 Tbsp honey or pure maple syrup
  • 1 tsp pepper
  • 1 tsp salt

Instructions

  • Combine all vegetables and all marinade ingredients in a large zip top bag. Toss well to coat. Let marinate 1 hour. Preheat grill to medium. Add vegetables and marinade to a grill basket. Grill 20-30 minutes, stirring occasionally, or until vegetables are tender-crisp. 6 servings
