Shoestring Sweet Potatoes

Arrange in a single layer on a baking sheet (hint: line your baking sheet with foil for easier clean up). Sprinkle with salt and pepper. Bake at 400 for 25 min. Turn broiler on and broil 2-5 min or until browned and crispy. See notes about alternatives to a spiralizer.

Cauliflower Steaks

  • 4. Mix dry seasonings in a small bowl. Brush cauliflower with oil, then sprinkle with seasoning. Grill over indirect med heat for 4 min on each side, or until tender-crisp.

Notes

If you don’t have a spiralizer, you might want to get one just so you can make these amazing shoestring sweet potatoes!  Fret not, though.  If you don't have a spiralizer you can shred the potatoes with a cheese grater or a food processor.
