Peel, core, and chop apples into about 1 inch pieces. Toss apples into a bowl and add remaining ingredients. Arrange apples on a baking sheet. Bake at 400 for 30 min or until the largest pieces are soft. Remove from oven. For smooth applesauce, transfer cooked apples to a blender and process until smooth. For chunky applesauce, mash with a fork.
