Rutabaga Fritters, Broccoli with Cheese Sauce

Ingredients

Rutabaga Fritters

  • 1 lb rutabaga
  • 1 lb sweet potato
  • 4 ea egg
  • 1 bunch green onion
  • 6 Tbsp flax meal
  • 1 cup parmesan cheese fresh grated
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pinch cayenne pepper if desired
  • extra virgin olive oil for sauteing

Broccoli with Cheese Sauce

  • 2 lbs broccoli cut into florets
  • 3/4 cup cheddar cheese
  • 1/4 cup milk

Instructions

Rutabaga Fritters

  • Peel rutabaga and potatoes.
  • Shred with food processor or cheese grater. Squeeze any excess moisture out with clean kitchen towel or paper towels.
  • Beat eggs. Mix in green onions, parmesan cheese, and grated vegetables. Add flax meal. Mix until slightly sticky. Form into 8 patties. Season patties with salt and pepper.
  • Heat oil in large nonstick skillet. Add patties. Cook 5 min per side, or until cooked through and golden on each side.

Broccoli with Cheese Sauce

  • Place broccoli in steamer basket on stovetop. Steam 8-10 min or until tender-crisp.
  • Meanwhile, heat small saucepan over med heat. Add cheese and milk, and stir constantly, until cheese melts and sauce becomes smooth. Pour sauce over cooked broccoli.
