Shred with food processor or cheese grater. Squeeze any excess moisture out with clean kitchen towel or paper towels.
Beat eggs. Mix in green onions, parmesan cheese, and grated vegetables. Add flax meal. Mix until slightly sticky. Form into 8 patties. Season patties with salt and pepper.
Heat oil in large nonstick skillet. Add patties. Cook 5 min per side, or until cooked through and golden on each side.
Broccoli with Cheese Sauce
Place broccoli in steamer basket on stovetop. Steam 8-10 min or until tender-crisp.
Meanwhile, heat small saucepan over med heat. Add cheese and milk, and stir constantly, until cheese melts and sauce becomes smooth. Pour sauce over cooked broccoli.
