Veggie Sandwich with Greek Yogurt

Ingredients

  • 2 slices 100% Whole Grain Bread such as Dave’s Killer Bread
  • 2 Tbsp plain Greek yogurt
  • 1 carrot grated
  • 1/2 avocado small
  • 2 Tbsp walnuts chopped
  • 1 bunch sprouts small
  • extra virgin olive oil to taste
  • salt to taste
  • pepper to taste

Instructions

  • Spread a slice of whole-wheat bread with plain Greek yogurt.
  • Add grated carrots, 1/2 of a sliced avocado, 2 tbsp chopped walnuts, and sprouts.
  • Drizzle with extra virgin olive oil, season with sea salt and pepper, and top with another slice of bread.
