1-2-3 Eat! Grilled Steak with Smothered Onions, Asparagus, Mashed Sweet Potatoes

Ingredients

Grilled Steak with Smothered Onions

  • 1 1/2 lb sirloin steak
  • kosher salt
  • pepper
  • 2 yellow onion medium, thinly sliced
  • 1 Tbsp unsalted butter

Roasted Asparagus

  • 1 lb asparagus ends trimmed
  • 3 Tbsp extra virgin olive oil
  • 2 tsp kosher salt

Mashed Sweet Potatoes

  • 4 sweet potato large
  • 2 Tbsp unsalted butter
  • 1/4 tsp cinnamon optional

Instructions

Grilled Steak with Smothered Onions

  • Preheat grill to medium heat.
  • Heat butter in a medium skillet. Add onions. Sauté 10-15 minutes or until browned and soft. Set aside.

  • While onions are cooking, sprinkle steak with salt and pepper. Grill 4-7 minutes per side or until steak has reached desired doneness. Serve onions on top of steak.

Roasted Asparagus

  • Preheat oven to 400.  Cut asparagus into 2 inch pieces.  Toss asparagus in oil.  Arrange in a single layer on a baking sheet.  Sprinkle with salt.  Bake at 400 for 15-20 minutes or until beginning to brown.

Mashed Sweet Potatoes

  • Peel potatoes. Cut into large chunks. Place chunks in a medium saucepan. Cover with water. Bring to a boil. Boil 12-18 minutes or until soft. Drain. Add butter and cinnamon, if using. Mash with potato masher, fork, or blender.

Notes

Leave out the butter for dairy free
