Roasted Purple Potato Fries is a GREAT oil-free side dish!  The egg whites add protein while adding that delicious crunch!

Roasted Purple Potatoes

  • 1 bag purple potato 16 oz, cut into wedges
  • 2 egg whites only
  • 1 tsp kosher salt
  • 1/2 tsp pepper


  • Preheat oven to 450. Beat egg whites until frothy. Toss potatoes and egg whites in a medium bowl until well coated. Spread in a single layer on a baking sheet. Sprinkle with salt and pepper.
  • Bake at 450 for 12-18 minutes or until potatoes are crispy on the outside and tender on the inside.
