Dark Chocolate Crunch Cups

  • 1/3 cup coconut oil
  • 1/3 cup dark cocoa powder such as Hershey's® Dark
  • 4 Tbsp honey or pure maple syrup
  • 1/3 cup crispy brown rice cereal no sugar listed in the ingredients, such as Barbara's® (see notes for links)


  • Melt coconut oil over low heat in a medium saucepan. Once melted, remove from heat and stir in cocoa powder and honey until smooth. Stir in rice cereal. Arrange evenly in 6 paper or foil cupcake cups. Freeze until firm.


NOTE:  Try either of these brands for the brown rice cereal with no regular sugar:
