Salmon Wraps

Ingredients

  • 1 lb salmon fillet wild caught preferred
  • 4 each 100% whole grain soft flour tortilla
  • 4 oz cream cheese softened
  • 4 oz feta cheese crumbled
  • 1 tomato large, diced
  • 1 red onion small, diced
  • 1 cucumber diced
  • 2 Tbsp lemon juice

Instructions

Grilled Salmon

  • Preheat grill to medium heat. Grill salmon until done, about 4 minutes per side.
  • Flake salmon; discard skin.
  • Spread 1/4 the cream cheese on each cream cheese on each tortilla.
  • Combine salmon, feta, tomato, red onion, cucumber, and lemon juice in a medium bowl. Spread 1/4 the salmon mixture down the center of each tortilla. Roll up.

Baked Salmon

  • Preheat oven to 350. Place salmon in baking dish. Bake at 350 for 20 minutes.
  • Flake salmon; discard skin.
  • Spread 1/4 the cream cheese on each cream cheese on each tortilla.
  • Combine salmon, feta, tomato, red onion, cucumber, and lemon juice in a medium bowl. Spread 1/4 the salmon mixture down the center of each tortilla. Roll up.
