Salmon-Kale Caesar Pasta Salad

Ingredients

Salad

  • 8 oz 100% whole grain bowtie pasta
  • 6 oz baby kale
  • 1 lb salmon fillet wild caught preferred
  • 2 egg hard-boiled, optional
  • 1/2 cup parmesan cheese grated

Caesar Dressing

  • 2 Tbsp bottled minced garlic
  • 2 1/2 Tbsp lemon juice
  • 2 1/2 Tbsp lime juice
  • 2 Tbsp rice vinegar
  • 1 1/2 Tbsp extra virgin olive oil
  • 2 Tbsp parmesan cheese grated
  • 2 tsp mustard powder
  • 1 tsp Bragg Liquid Aminos
  • 1/4 tsp pepper

Instructions

Salad

  • Bring medium pot of water to a boil. Preheat grill to medium.
  • Cook pasta according to package directions. While pasta is cooking, place salmon on grill and grill 4 min per side or until salmon is cooked through and fish flakes easily when pricked with fork. Flake salmon and set aside. Drain pasta.
  • Combine pasta, salmon, kale, and dressing in a bowl. Toss well. Sprinkle with parmesan.

Dressing

  • Combine all dressing ingredients in a blender. Blend until smooth.

Instant Pot

  • Add 1 cup water to Instant Pot. Add pasta and 2 cups water to one pot that will fit inside your instant pot. Add a layer of parchment paper to a second pot that will fit on top of the first pot. (Pot in pot method.) Add salmon to second pot. Cover both pots tightly and place on trivet. Lock lid; set valve to sealing. Program for manual-high and 4 minutes. When cook time ends, carefully move valve to venting to allow all remaining steam to escape. Carefully remove both pots. Flake salmon.
  • Combine pasta, salmon, kale, and dressing in a bowl. Toss well. Sprinkle with parmesan.

We used this double pot-in-pot for testing purposes.
