Frites Petite (Mini Purple Fries)

Ingredients

  • 1 package purple potato 28 oz, cut thick julienne
  • 2 each egg whites only
  • 1 tsp kosher salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 450. Beat egg whites until foamy. Toss julienned potatoes with egg whites in a medium bowl. Strain any excess egg white off fries using a fine mesh strainer. 

Arrange fries in a single layer on a parchment-lined baking sheet, assuring they are not touching.

 Sprinkle with salt and pepper.

 Bake at 450 for 20 min or until cooked through and crispy on the outside.
