Mexican Roasted Potatoes

Ingredients

  • 28 oz purple potato halved
  • 1/3 cup avocado oil
  • 2 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder

Instructions

  • Preheat oven to 400. Line a baking sheet with parchment paper. Add potatoes and all other ingredients to a bowl. Toss well to coat. Arrange in a single layer on prepared baking sheet. Bake at 400 30 minutes.
