Keto Cauliflower Mash with Cream Cheese

Ingredients

  • 1 head cauliflower large, cut into florets, about 2 lbs
  • 6 oz cream cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • unsalted butter optional

Instructions

Stovetop

  • Fit a large pot with a steamer basket. Fill bottom with water. Add cauliflower to steamer basket. Cover. Bring to a boil and allow to steam 20 minutes.
  • Drain water. Return cauliflower to pot. Puree with an immersion blender.
  • Add cream cheese, salt, and pepper. Puree again with immersion blender until cream cheese is melted. Add butter and stir to melt if desired.

Instant Pot®

  • Add 1 cup water to instant pot. Add cauliflower in steamer basket or directly in water (steamer basket makes it easier to drain) Seal, program for manual, high, and decrease time to 8 minutes.
  • When cook time ends, select either natural pressure release or quick release. Drain water. Using an immersion blender, puree cauliflower.
  • Add cream cheese, salt, and pepper. Puree again with immersion blender until cream cheese is melted. Add butter and stir to melt if desired.
