Carrot Cake Mug Cake

Ingredients

Carrot Cake

  • 1/4 cup 100% whole wheat flour
  • 1 Tbsp coconut sugar
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp baking powder
  • 1/4 cup milk
  • 1 Tbsp unsalted butter melted
  • 2 tsp carrots shredded (about 1 medium carrot)

Cream Cheese Frosting

  • 2 Tbsp cream cheese soft
  • 1 tsp pure maple syrup

Toppings

  • 1 tsp carrot shredded, optional
  • 1 Tbsp pecans chopped, optional

Instructions

Carrot Cake

  • Mix all ingredients in a microwave safe mug. Microwave on high 1 minute to 1 minute 15 seconds.

Cream Cheese Frosting

  • In a small blender or food processor, combine both ingredients until smooth and creamy. You will need to scrape the sides frequently. (Personal blenders work great for this.)

Toppings

  • Top carrot cake with cream cheese frosting, and garnish with additional shredded carrots and chopped pecans, if desired.
