Fresh Berry Tarts

Ingredients

  • 1 cup all purpose baking mix see below if you don't have any pre-made
  • 2 Tbsp coconut sugar
  • 1 Tbsp unsalted butter melted
  • 8 oz cream cheese softened
  • 1/4 cup honey
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups fresh fruit berries and kiwifruit suggested
  • cooking spray

All Purpose Baking Mix

  • 4 cups whole wheat flour
  • 2.5 Tbsp baking powder
  • 3 tsp salt
  • 3/4 cup buttermilk powder soy milk powder for dairy free
  • 1/2 cup avocado oil or extra virgin olive oil

Instructions

  • Heat oven to 375. Spray individual tart pans with cooking spray.
  • Mix baking mix, coconut sugar, butter, and 3 oz cream cheese until soft dough forms. Press dough on bottom and up sides of 6 tart pans. Place prepared tart pans on a baking sheet. Bake at 375 for 9-11 min or until light brown. Cool completely.
  • Mix remaining cream cheese, honey, and sour cream until smooth. (I used an electric mixer fitted with a beater, on medium speed. Filling mixed by hand might not be as smooth.)
  • Spoon filling into cooled tart shells. Top with berries. Serve immediately or store covered in refrigerator.

All Purpose Baking Mix

  • Mix all ingredients. Store in airtight container in freezer. (Note you only need one cup of this mix for the tart recipe.)
