Blackened Tilapia, Asparagus, Cheesy Zoodles

Ingredients

Blackened Tilapia

  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp paprika
  • 2 tsp garlic powder
  • 4 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 4 tilapia filet or other white fish, thawed, 6 oz. each

Asparagus

  • 1 lb asparagus trimmed

Cheesy Zoodles

  • 2 zucchini medium, zoodled
  • 8 oz cheddar cheese grated
  • 2 oz cream cheese softened
  • 1 Tbsp plain Greek yogurt
  • salt to taste
  • pepper to taste

Instructions

Blackened Tilapia

  • Heat oven to 425. Mix first 8 ingredients in a small bowl. Rub spice mix onto each side of each fillet. Add fillets to a baking dish. Bake at 425 for 11-15 minutes or until fish flakes easily with fork.

Asparagus

  • Cut into 2 inch pieces. Insert steamer basket into medium saucepan. Fill saucepan with 2-3 inches of water. Place asparagus in steamer basket, place over medium high heat. Bring to a boil, cover. Steam 6 minutes.

Cheesy Zoodles

  • Heat cheeses in a small skillet until melted, stirring frequently. Remove from heat. Stir in yogurt, salt, and pepper; stir until smooth. Add zoodles and stir to coat.
