brown rice
uncooked

90% lean or leaner

frozen green bell peppers

frozen diced onions

frozen corn

Diced Tomatoes
14.5 oz

black beans
14.5 oz, rinsed and drained
2
cups
cheddar cheese
grated, as topping, optional
Instructions
Preheat oven to 350.
Cook rice according to package directions.
While rice is cooking, brown beef. Once beef is no longer pink, add peppers, onion, corn, spices, tomatoes, and black beans. Stir well to combine.
Add rice to a greased 13X9 baking dish. Top with meat mixture. Top with cheese. Bake 15 minutes or until cheese is melted.
