Clean Eating Hawaiian Macaroni Salad

Ingredients

  • 1/2 lb 100% Whole Wheat elbow macaroni
  • 1 carrot small, shredded
  • 5 scallions finely chopped
  • 1 Tbsp apple cider vinegar
  • 1/4 cup mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1/4 cup milk
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • 1 tsp salt
  • 2 tsp pepper

Instructions

  • Cook pasta according to directions on the package. Drain and allow to cool to room temperature (rinse under cold water or let it cool naturally). Drain well.
  • Put all the ingredients for the Hawaiian macaroni salad in a bowl and stir until evenly coated.
  • Serve cold.
