Apple Pie Granola

Ingredients

  • 2 cups oats
  • 1/2 cup pecans chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup dried apple rings chopped
  • 2 Tbsp pure maple syrup
  • 2 Tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp dried ginger
  • 1/4 tsp ground cloves

Instructions

  • Preheat oven to 300 F.
  • Mix all ingredients and spread onto a parchment-lined baking sheet. Bake at 300 for 10 minutes. Allow to cool, then store in an airtight container for up to two weeks.

  • Note: Mix vanilla extract and pure maple syrup into plain yogurt and put this granola on top for an “apple pie a la mode” breakfast parfait
