ULTIMATE RESET -Nori Roll Bowls With Tempeh and Veggies

- 1/2 tsp extra virgin olive oil
- 1 strip tofu smoky tempeh
- 1 sheet nori seaweed
- 1/3 cup brown rice cooked according to package directions
- 1/4 avocado
- 1/4 carrot
- 1/4 cucumber
Heat oil in large skillet over medium heat. Add tempeh; cook, stirring frequently, for 2 to 3 minutes, or until crisp.
Place nori in blender or food processor. Process into crumbs. Add to bowl. Chop tempeh, carrots, avocado, and cucumber. Add to bowl. Stir well.
Sprinkle with Nori Gomasio (if desired).
