ULTIMATE RESET -Nori Roll Bowls With Tempeh and Veggies

Ingredients

  • 1/2 tsp extra virgin olive oil
  • 1 strip tofu smoky tempeh
  • 1 sheet nori seaweed
  • 1/3 cup brown rice cooked according to package directions
  • 1/4 avocado
  • 1/4 carrot
  • 1/4 cucumber

Instructions

  • Heat oil in large skillet over medium heat. Add tempeh; cook, stirring frequently, for 2 to 3 minutes, or until crisp.
  • Place nori in blender or food processor. Process into crumbs. Add to bowl. Chop tempeh, carrots, avocado, and cucumber. Add to bowl. Stir well.
  • Sprinkle with Nori Gomasio (if desired).
