Casseroles! Healthy Hacks for 4 Classic Favorites


 
Behold, the casserole, or as we call it in the midwest, “hotdish.”

The staple of pot lucks, the giver of full bellies, the new baby dinner, the reason the 13X9 pan was invented: casseroles are comfort food at its finest.”
All that being true, one thing casseroles are not exactly known for is for being healthy or nutrient-giving. And it’s not that all casseroles are bad, surely there are worse things one can eat! But they do tend to be high in calories and, when made with cream of something soup as many are, they can be high in sodium and other highly processed ingredients that aren’t doing our bodies any favors.
But that just doesn’t stop me from loving them!

As condensed soups almost always contain red tier ingredients, there aren’t a lot of casseroles that are 90/10- friendly as written. But that doesn’t mean we can’t adjust and adapt, right?”

Apple-Cinnamon Toast Casserole. Breakfast in a 13X9 inch rectangle? Yes please. (My kids call this “blueberry stuff.” As in, “Is there any of that yummy blueberry stuff left in the fridge?”)
