This is a traditional recipe from Newfoundland. I've made numerous times in my own way. No real recipe is normally required as every household would have their own version of this & just throw it together, but all recipes would be very similar. I usually use savory instead of dill.     1. Boil cod in a little water with 1/2 t salt about 5 mins until able to easily flake apart into bite size pieces.
    2. Preheat oven to 375F. Spread cod in a 9x9 casserole dish. Lay to one side.
    3. In a pot, add the EVOO & heat on med. Add onion & cook until soft or even carmelized. About 5 mins.
    4. To the onion, add the butter & melt. Add the flour & stir forming a paste for a couple of mins. Slowly add milk whisking until blended & thickened, a couple of mins.
    5. Add remaining 1 t salt, .25 t pepper, 1 t lemon zest & 1.5 t dill. Combine & pour mixture over the cod, coating the fish, stirring if needed.
    6. Mix the cheese & breadcrumbs & put on top of fish mixture. Sprinkle with remaining .25 t dill. Bake for 40 mins until browned & bubbly.
