Such a long name for such an easy meal!  Serve this Parmesan-Asiago Crusted Salmon with Lemon-Cream Sauce with brown or wild rice, if desired.

Parmesan-Asiago Crusted Salmon

Parmesan-Asiago Crusted Salmon with Lemon-Cream Sauce

Ingredients

Salmon

  • 4 salmon fillet 4-6 oz each
  • 1 Tbsp Dijon mustard
  • 1 cup 100% whole wheat panko
  • 3 tsp unsalted butter melted
  • 1/3 cup parmesan cheese grated
  • 1/3 cup asiago cheese grated
  • 2 Tbsp fresh parsley chopped
  • 2 Tbsp fresh dill chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Lemon-Cream Sauce

  • 3/4 cup white wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 4 oz cream cheese softened
  • 1/2 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

Salmon

  • Spread 1 Tablespoon dijon mustard evenly over salmon. Combine panko, melted butter, parmesan, asiago, parsley, dill, zest, salt, and pepper in a blender or food processor. Process until crumbly and well combined. Coat salmon with panko mixture. Place salmon on a parchment-lined baking sheet.
  • Bake at 375 for 20 minutes or to desired doneness.

Sauce

  • While salmon is baking, combine white wine vinegar, 1 tablespoon dijon, lemon juice, cream cheese, honey, salt and pepper in a blender or food processor. Process until smooth.
  • Plate salmon over 7 Minute Green Beans, if desired. Drizzle sauce over salmon.

  1. The cooking instructions seem to include ingredients that are not listed in the ingredient list like zest, onion, and the butter in the cream sauce.
