Add cheddar to a food processor. Pulse to crumble. Add all remaining ingredients. Process until smooth. Serve with whole grain crackers, apple slices, whole grain french bread, or whole grain pita bread.
If you can’t find garlic cheddar cheese in the gourmet cheese section of your local grocer’s, use a strong (irish preferred) cheddar instead, and add 2 teaspoons bottled minced garlic along with the other ingredients.
