Get to Grilling Summer Seasonal Veggies

Summertime grilling season is swinging into full effect.  Usually our go-to grilling staples include great healthy protein options like lean cuts of beef, chicken and pork but there are so many 90/10 Nutrition green tier foods that are given an extra special punch when grilled.

 

Grilling is a great healthy way to cook vegetables.  Peppers, onions, zucchini, squash, green beans, asparagus – the options really are only limited by your own creativity.

 

This week in our 90/10 Nutrition Facebook Challenge Group Coach Mitch Turner shared this great recipe for Grilled Lemon Pepper Zucchini.  The greatest part about this recipe is that you can substitute in any of your favorite seasonal vegetables.  It really is an incredibly versatile (and delicious) way to make sure you’re getting in all of your veggies, all summer long!

  1. Preheat an outdoor grill for high heat. When hot, lightly oil grate.
  2. Combine the squash, zucchini, onion, and bell pepper in a bowl; drizzle with olive oil; sprinkle with lemon-pepper seasoning; stir to coat. Place the vegetable mixture in the center of a large sheet of aluminum foil. Top with another large sheet of aluminum foil. Roll the edges of the foil sheets together to seal into a packet.
  3. Place the packet on the preheated grill. Cook until the vegetables are tender, about 30 minutes, turning the packet every 5 to 10 minutes.
